I absolutely love butternut squash and there is so many easy ways to cook it. Today I will share with you my latest fast, super easy, nutritious and really delicious way to eat butternut squash.
If you only cut it in half, it takes close to 1 hour to bake, unless you cut it into cubes, like I did this time. I've made this many times before and I absolutely love the flavor.
Cut squash in half lengthwise, using a spoon, scoop out the seeds, peel and if you prefer cut it in cubes so it bakes faster (about 30 minutes).
Spread a little bit of vegetable oil on your baking pan, season with salt and black pepper and roast until is fork-tender.
Preheat the oven to 400 degrees F.
