To start well this week I wanted to share a delicious, fresh and super healthy salad. It's super easy and perfect for spring!!!

Do you love artichokes? They are absolutely delicious, I love them!
Artichokes are really good for you, full of potassium, fiber, vitamin C, magnesium, tons of antioxidants and awesome for your liver.
What you need for this simple salad:
- 1 Fresh Artichoke or if you prefer 1 can of cooked/chopped artichoke hearts
- Arugula leaves
- Radicchio leaves
- 1 smashed garlic clove
- Your favorite olive oil
-Half squeezed lemon
- Fresh or dry oregano
- Salt and Pepper
-You can always add shredded Parmesan cheese. It is delicious! :)
Mix all ingredients in a bowl until well combined and enjoy!!!
*Cooking time for the artichoke really depends on the size. It takes between 25 minutes to 45 minutes.
